'Passionate, creative, visionary’: Pastry chef Paul Wittamer dies at 81

Belgian pastry chef Paul Wittamer has died at the age of 81. He was the grandson of the founder of the famous bakery and chocolate store in central Brussels.
For more than 40 years, Wittamer and his sister Myriam ran the prestigious family business, which was established by his grandfather Henri in 1910 on the Grand Sablon.
“Passionate, creative and visionary, Paul knew how to pass on his love of taste, pastry and above all chocolate,” his family posted on Instagram. “He has left an indelible mark on Brussels' culinary history. Thank you, Paul, for your legacy and inspiration.”
As well as the Sablon in central Brussels, the brand has two other branches in Uccle. Wittamer opened its first store in Osaka, Japan, in 1990 and now has 22 outlets in the country. Paul and Myriam Wittamer sold their shares in the company to three investors in 2021.
